Mediterranean Pizza

I thought this pizza was so good and quick that I've decided to post the recipe!




I used ciabatta bread and sliced it in half as the dough. I spread store-bought pizza sauce on the bread (I used Ragu pizza sauce) because I got some for free and wasn't in the mood to make my own. I cut sun-dried tomatoes into small pieces and added it to the sauce, as well as chopped spinach. If you wanted it to look really nice though, you could wait to add the spinach to the pizza until the last three minutes of cooking. On top of that I chopped and added Kalamata pitted olives and then crumbled feta cheese over everything. I put the finished pizza in my toaster oven at 350 degrees for 10 minutes.

So delicious! I don't know how healthy it is, but it uses less cheese than traditional pizza and I think it tastes just wonderful. You could also try fat-free feta cheese, I personally can't taste the difference.
